Signature breakfast beans
- 1 onion
- 2 cloves garlic
- half an inch fresh ginger
- 1 small tomato
- 4 mushrooms
- 1 can of baked beans
- 1/4 tsp salt
- 1/2 tsp curry powder
- 1/4 tsp turmeric
- 1/4 tsp cumin
- 1/4 tsp chilli flakes
- 1/4 tsp coriander powder
- 1/2 tsp oregano
- 1 tsp tomato paste
- Fry onions
- Add garlic and ginger then fry for a minute
- Add tomatoes and mushrooms and fry until soft
- Add the tomato paste with spices and continue to cook for another minute
- Add the beans and simmer until desired level of thickness
- (optional) Squeeze in some fresh lemon juice for added flavour
- Serve with toast or as a burrito
