Chilli con carne
- 500g beef mince (or 400g mushrooms)
- 2 bell peppers
- 1 large or 2 small onions
- 3 cloves garlic
- 1 inch fresh ginger
- 400ml beef or veggie stock
- 400g canned chopped tomatoes
- 400g canned red kidney beans
- 2 tbsp tomato puree
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp coriander powder
- 1 tsp salt
- Coriander for garnish
- Cook the beef until browned (if using beef) then put it aside
- Cook the onions until soft
- Add the garlic and ginger and cook for 1 minute
- Add the mushrooms and peppers and cook until soft
- Add the tomato paste and spices and cook for 2 minutes
- Add the stock and chopped tomatoes and cook for 30-45 minutes
- Add the kidney beans 5 minutes before you finish cooking
- Add the coriander for garnish and serve with rice
