Chilli con carne

  1. Cook the beef until browned (if using beef) then put it aside
  2. Cook the onions until soft
  3. Add the garlic and ginger and cook for 1 minute
  4. Add the mushrooms and peppers and cook until soft
  5. Add the tomato paste and spices and cook for 2 minutes
  6. Add the stock and chopped tomatoes and cook for 30-45 minutes
  7. Add the kidney beans 5 minutes before you finish cooking
  8. Add the coriander for garnish and serve with rice
